Villa Cappelli Limoncello

- 10-12 Lemons
- 1L of alcohol
- 500g of sugar
- 1L of water
- Take the peels of 10-12 lemons (try not to get too much pith, you want just the peel) and macerate in 1L of alcohol for a few weeks. Drain and set aside.
- Make a simple syrup by boiling 500g of sugar to every 1L of water. Once the water is simmering and the sugar is all dissolved, remove from the heat and let cool to room temperature.
- Combine equal parts lemon alcohol with the simple syrup. Bottle and store in and airtight bottle (otherwise the alcohol will evaporate leaving you with nasty lemon sugar).
